Paleo is a word you hear thrown around a lot lately. I'm no proponent of chucking grains out of your diet altogether, but some of these recipes, I have to admit, are ingenious. This high protein twist on pancakes is a really nice option to kickstart your day without that sluggish feeling carbs can give you first thing in the morning. Plus, they are absolutely scrumptious!
1/2 cup almond butter
2 teaspoons cinnamon
maple syrup or fresh berries as topping (optional)
Combine all ingredients in your blender or food processor, and mix until smooth.
Grease your pan with coconut oil or butter and pour your batter, making 3-4 inch pancakes (don't go bigger or they'll fall apart).
Cook for 2-3 minutes per side and then flip for another 2-3 minutes.
Serve topped with fresh berries or maple syrup.
