Sometimes, in life, you just need a little chocolate. This version is packed with antioxidants, fibre, and good stuff so you can enjoy them while feeling good about yourself. Yes, these brownies are actually good for you! Enjoy them at tea time with your favourite herbal tea.
1 can black beans, drained and rinsed
2 organic eggs
1/4 cup unsweetened cocoa powder
2/3 cup honey
1/3 cup coconut oil
1/2 teaspoon baking powder
Pinch of sea salt
3/4 cup dark chocolate of your choice, roughly chopped into small pieces
Preheat oven to 350 degrees Fahrenheit.
Place all ingredients, except for chocolate chunks, in blender or food processor and blend until smooth.
Pour batter into large bowl and stir in ½ cup chocolate chunks.
Pour into greased 8x8-inch pan and top with ¼ cup chocolate chunks.
Bake 30 minutes or until toothpick comes out clean.
